Okay, when an opponent grabs a ledge and doesn't want to leave the ground he can:
1) Press A
2) Press R
3) Just tap

This is once again assuming this person doesn't want to jump...

Okay so to the point, I spiked a ganondorf who didn't feel like jumping and he chose one of these options but I couldn't tell which. I spiked him right as he was climbing up the side of the stage during what looked like invincibility frames. Is there a certain vunerability point in any of the above options that you can spike someone?

I'm going to assume it's a jump anyways because Ganon has a slow ledgejump animation and you could've hit him before he gained any vertical height. Again, that's just my opinion.

I'm not completely sure what you mean by "doesn't want to leave the ground" or "doesn't want to jump." Do you just mean hitting X/Y from the edge, or does that including dropping first? I've found in all three smash games the best option is often to drop then use your "second jump" to get on the stage (usually with an attack). This is fine for ground-based people because you don't really spend that much time in the air.

I haven't played with many Ganons in Brawl but I believe dropping then jumping onto the stage with the uair works fine (I know it did in Melee and it does in Brawl with Falcon). I've managed to spike people who try that, which may be what happened.

Or you may have simply spiked them when they lost their invincibility frames but didn't do anything to get off the edge yet.

If it wasn't one of those (doesn't quite fit your description perfectly) I'm curious as to what happened.

While Ganon can't do this I feel I should point out another option that some characters have in Brawl that you didn't list: drop then immediately grapple back onto the edge. This is a very fast way to regain the invincibility frames. I do this with Samus both to keep the edge hogged while someone takes swipes at me before they try to up-b on the edge as well as to make sure when I do go back onto the stage I'm still invincible.
