Can you cancel by just pressing down before you hit the ground?

No. You have to press either L, R, or Z to cancel your lag after an aerial A move.

What if you don't hit the ground?

I assume if you haven't hit the ground yet, you're still performing your attack. If you could just push down, that would completely defeat the purpose of cancelling, wouldn't it?
