Olimar vs Falco

If you want to talk about how Olimar can escape from that, go to the Olimar boards, they have more experience with him. ;)

Almost every character can DI, Jump, AirDodge out of the CG at 40% some earlier, some later

Air dodge would be great with a DI away from the stage. If your opponent sees it, then just air dodge then try to go below the stage because Olimar still has his recovery. On a side note, hi Weruop, it's me Suzaku! ^^

The best way to break out of Falco's Chain Grab is to either spam A or Jump as quickly as possible. If your character is floaty, spam Jump (example: Olimar). If your character falls fast or has a Flurry AAA combo, spam A (example: Falco).

or dthrows into spike?
As far as I know, you cannot guarentee you'll dodge the spike. Assuming Falco does it correctly, he gets within spikable range before your character's "break away from grab" animation finishs. So, you won't gain control of your character fast enough to do anything. But your best bet is to air dodge.
