Except Soulcalibur V's pacing was just about equal to Soulcalibur II's pacing. Soulcalibur III was much faster compared to II and Soulcalibur IV was horrendously slow. Heck, some SC pros said that V's gameplay was the best since SCII. So really, SCV's problem wasn't the gameplay, it was the lack of single player content/things to do and the characters. The biggest problem with soul calibur V was removing mainstays from the series and also the amount of jank in it. I feel like SC6 is a return to form in the sense that the game plays about as a fast paced as earlier entries, while including old fan favorites. Hence why the rebooted the franchise timeline.
Although I blame Namco for messing over the developers. One for the developers wanting to call it Soul Edge 2(which likely would've fit better) and Namco saying no and two for Namco wanting Soulcalibur V to come out before Street Fighter X Tekken. And three for not delaying it enough for the developers to finish Bangoo and Long-sword Cassandra for SCV.
