I made a vid about this a while back but it didn't show all i wanted to show.
Backtracking is very simple to do simply grab your enemy head-but 1 time, then B-throw, and wavedash back in the same motion. then press z to grab. after that tech chase after nana throws him. This only works on Fox and Falco. (It works on falcon at low % but when fighting falcon its better to just normal chain-grabs.)
This new chain-grab isn't meant to replace the old-school(D-throw,S-hop,D-air,Grab) chain-grab in any way. Back tracking only purpose is to confuse and impress your enemy. It also provides a nice tech chase opprotunity because all you have to do it predict where Nana is going to throw.
