Hey, Ganondorf is my second favourite character, but i need help..

at 0:18, i can't do that, how is that performed?
And can someone explain me important combos which i need if i want to be good with ganondorf?

If you mean the Up + B on Caption Falcon, that's merely pressing Up + B toward your opponent.
