It really depends on the pokemon you're using. Its not worth investing any defensive EVs into Infernape, for instance, because its not going to make a difference. But some people invest a few special defense EVs into Garchomp, for instance, to survive an expected hidden power ice.

Also, ignoring natures is a poor choice. It makes a lot of difference, and isn't too hard to obtain.

i would suggest you put a wall or two and someone to give out status effects or use spikes/toxic spikes/stealth rock and maybe if you want a baton passer to boost your sweepers ability's.

Also, ignoring natures is a poor choice. It makes a lot of difference, and isn't too hard to obtain.
don't ignore natures
example: a garchomp with 31 ivs in atk and 252 ev points put in atk with an adamant nature can have 394 atk while a modest garchomp will only have 323 atk. thats a difference of 71.

its not hard to get good nature Pokemon it just takes a lot of time. i have like 8 boxes full of Pokemon i got from trying to breed the right natured Pokemon. i've spent like 10 or more hours doing that. sometimes you get lucky though. i needed a rhyhorn to breed so i got one of gts and it was already adamant and had its egg moves. that saved me at least an hour.

Actually, you can go on a ditto catching spree and get one of every major nature. When the female (in this case the ditto) holds an Everstone, there is a 50% chance of her nature being passed. That's how you breed for natures.

As for the original topic, I think it's an interesting question. Would it be better if a sweeper could at least take a hit while executing a 2HKO? Well, if you invest EVs properly and play smart, defense stats of your sweepers shouldn't matter too much. Most sweepers have sets that cover a wide range of types. So if a sweeper's max-attack stat lands a super effective hit, it will most likely OHKO.

Also, you're thinking in terms of Sweeper VS Sweeper (not surprising if your team is all sweepers). But cutting your sweeper's offense limits their versatility. Their edge against tanks disappears, walls become untouchable, and supporters get away with more set-ups.
