Match Result Reporting Forms: How Do We Do This Right?

I'm hosting an online tournament with the explicit goal of gathering some useful data on customs, characters, and "unconventional" stages. And to do this, I'd like to get my reporting together. I figure a useful tool for this would be Google Forms, but I'm hitting some hurdles. (Ignore the tournament's premise for a moment - this sort of form is useful regardless of how conventional or nonconventional your ruleset is.)

First of all, the real money data here is, "Which characters struck to which stage", "which characters counterpicked which characters to what stage and with what customs", and "which stages were banned against which characters". The problem with this? Gathering this data is a pain in the ass with google forms. You really do have to do it round by round, which means a grand total of 10 multiple-choice lists for characters ("Player 1 round 1" "Player 2 round 1" "Player 1 round 2", etc.), and another 5-9 for stages (5 for which stage was played, up to another 4 depending on how many stage bans you have).
This is obnoxious to look at and fill out, because google apparently has never heard of the concept of "putting more than one option per line" on their forms.

. As you can see, I'm not even past round two, and it's already a gigantic mess.

So really, what we're looking for seems to be a spreadsheet. But how do you get people to submit spreadsheets? Like, I threw this together real quick, and I'm sure someone better at spreadsheets than I am could handle it much better, and this seems like a better way of getting results. But I don't know how to aggregate it at all.

Any suggestions? Is there a tool for this?
