You won't get the chance too often. Use it sparingly to try and catch them off guard. One way to do it is to jump off stage backwards as if you are gonna use bair. As you move back, bait the air dodge and fair while getting behind them.
Marios Fair isn't very useful, it's one of his very worst moves.
It's only good as a mixup. If you can land it, then by all means do so, but unless they're at maybe 90% or more, it won't be killing anything except yourself.
