I'm obviously missing something here

How do you wavedash/waveshine off a ledge without grabbing onto it? (When facing the stage, obviously)

I've tried just holding away from the ledge, but that doesn't seem to work... I have a feeling it's something incredibly simple haha.

I THINK you need to wavedash far off the ledge and FF.

Holding down after you wd always works for me.

holding down will prevent you from grabbing the ledge

Just hold down after you wavedash/waveshine and you should drop off the ledge.

While holding down your character doesn't grab the edge. This happens while doing anything not just wavedashing and is useful in quite a few situations.
