people who play multiple characters usually have a better understanding of it.
but here is a nice example.
lets say forward is playing in a tournament. and is using falco. And then he runs in to mew2king. And mew2king chain grabs him a bunch and keeps gimping him. In a way you could say mew2king's marth is countering forwards falco style.
sooo......
forward might consider switching to sheik because sheik has an easier time recovering against marth and doesn't have to deal with chain grabbing. but this is only possible to do because forward has a worthy sheik. if he didn't actually play another character who is tournament worthy (maybe your problem?) then there wouldn't be any point in counter picking because you would probably just end up losing by a larger margin.
another way to counter pick would be picking a stage to counter a certain playing style, or maybe just make a choice based off of a characters physical properties. So if a marth played against jigglypuff and lost on a large stage like mute city. he might want to switch to yoshis story to take advantage of the fact that jigglypuff dies fast on that level.
