Because it's true? Realizing your limitations will make you play much more defensive - "Oh, I can't hit him safely from this distance so I'll wait until he gets here."
But really, he only has a couple tricks up his sleeve whereas other characters have so much more. He has the Thunder Punch, the Flame Choke and it's combo's and a couple strong attacks. Ganondorf is just too slow to get anything off offensively, defensively he's hard to play because his grab range isn't good and spacing is much easier due to the floaty nature of the game. His recovery sucks and only goes into two directions (compare it to Fox who's Up+B can go into SIXTEEN directions) - forward and up, with forward and up B.
He is an okay character and REALLY fun to play as (which is I why I main the fellow) but when compared to a lot of other characters, he's nothing. His strength is comparable to Ike, but Ike's got the top because he has much more options, a lot more useable approaching moves, a better grab range, better recovery and a LOT more range on his attacks, something that Ganondorf really lacks.
Knowing the limitations of your character will make sure you don't overestimate your own and your character's abilities. If you think "Pfft, I can get him with my fair and kill 'im!" then try to do that and your opponent airdodges/sidesteps/rolls/any other defensive or evasive maneuver you will get punished.
tl;dr: He's slow, has low range, only a few good tricks when compared to other characters, recovery is still pretty bad, knowing your limitations won't make you overestimate yourself and fail.
Remember guys, even if Gimpyfish is really good with Bowser, it doesn't mean Bowser doesn't suck (In fact, Gimpy's the one who keeps persisting Bowser is really, really bad).
