Honestly, I'm not really sure how to level Princess Peach's floating and it gets so annoying, it makes her aerial attacks limited for me and I can only use ground attacks. o-O Does anyone else have this problem as well?? Or is it just me that sucks at fighting with Peach?

You can control how high or low Peach floats by pressing down at the height you want to float at (while holding jump). Another tip is if you want to float on the ground, hold jump and press down at the same time.
