in the ev training guide that is stickied here, it says "get to level 25 and then..." How about if the pokemon in question are higher level?

yea, but if the optimum is 252/252/6 in whatever stats.... It seems like there is a particular reason that the guide says level 25, kill 25 of this or that. I was mainly wondering what the differentiation would be.

It's not that bad. All you need is a notebook, a Pen and your pokétch. The Calculator App and the Counter App make it much easier. It also helps if you have Power Items and Pokérus. It'll go much faster.

Notebook with pen, and the poketch with calculator App does help alot. Though, I also have the Serebii DP calculator up and just add to the EV input boxes then write it down later.

I also find it is alot easier to use in game trainers, since you can get the advantages of level up and Pokebucks with the needed EV's. Though, you'll need the step counter App and Vs. Seeker as well as the bike to charge the Vs. Seeker faster.

The west end of route 222, west of Sunyshore City, is a rich boy with a luxio at around level 50. You get 2 evs in attack and around 6000 pokebucks. Gold mine if you have macho brace, luck incense, or anything similiar to the two.
Just south of Sandgem Town are two tubers with aroung level 25 water pokemon. You'll need surf to get to them. You get almost no pokebucks, even with luck incense, but you can get great HP evs from battling them. Without macho brace and pokerus, you can have a total of 4 evs from one battling the marill trainer, who use 2 marill.

I may post more if I can find more good trainers for the specif EV.
