It's called a ledge hop. If you hit the control down or away from the ledge while on it, you will simply let go of the edge. For then you can double jump or do something else.

Yup. Also if you hit back and keep holding back after you jump, you'll jump backwards, which puts you in a good position to bair, which is easily doc's best edge guarding move.

another idea is to hit down on the control stick and x or y at the same time. it will make it appear as if you actually jump straight up from the ledge, allowing you to do any air attack or pill and then grab onto the ledge again. just be careful because you won't have any jumps to work with.

Well that'd be a good tactic if the opponent is using their third jump, but you'd have to be quick or else you won't make it back to the edge with your third jump.

It does, and unless you are trying to do a mindgame it would probably be better to just edge guard a cape. For example, if you are fighting Fox and you are ledge hogging, presumebly he won't go for the ledge so he'll go over you. So if you ledge hop and cape at the right moment, you'll catch him off guard and he'll be dead. It really depends. Though, usually, if you are ledge hogging it is best to ledge drop/hop some bairs because
1. They don't turn you around and
2. You can ledge cancel them
