Here's an interesting tidbit about Captain Falcon:
Each of his alternate costumes in melee have their own theme song. (themes and pictures in the links)
Standard Costume: As we all know, Doug Falcon's original costume in melee is himself, and in F-Zero GX the cap'n has his own themeas racer #7
Black Costume: I've heard a lot about this costume. Some believe that it came from Phoenix, the time-traveling detective. However, this costume also appeared in the first smash bros (released in 1999) but the phoenix didn't debut until F-zero AX (released in 2003, two years after Melee) so this costume couldn't have come from him. Too bad, he has an awesome theme song.
Some say that this costume is based on Black Shadow, which would give it the black shadow theme. Since Black Shadow debuted in F-Zero X (released in 1998), which predated Smash Bros 64, it's entirely possible.
F-zero X also had a commercial of a cosplaying falcon dressed in black. There is a youtube-famous smash bros history researcher that believes that this costume comes from that commercial, which would give it the theme song played from that commercial I guess. It could also be a reference to Mach Rider.
Red Costume: Blood Falcon. Need I say more?
Pink Costume: This costume comes from Jody Summers F-Zero X outfit. In the later games, her white was changed to bright pink and her pink was changed to red.
Green Costume: This costume most likely came from the Pico race machine because falcon is wearing a green suit with orange-ish/golden yellow helmet and forearms, but the gloves and boots could have come from the Bio Rex racer machine Big Fang, since it is green with silver fangs.
Blue Costume: This one is a bit trickier to figure out. It is possible that it was based on the big blue track from F-Zero X with the suit being bright blue and the gloves and boots being the same color as the boost pad. This could also be based on Jack Levin's costume from F-zero X (GX costume can be seen here), but ultimately the blue costume most resembles captain falcon's costume from F-Zero X (seen here)
Another interesting tidbit I found while researching is that Captain Falcon has another race machine, The Super Falcon. What makes this interesting is that apperently he wears a lighter costume while piloting it.

Trivia:
Phoenix seems to be a mix of Captain Falcon and Viewtiful Joe. Because of this, it's been believed that Phoenix is actually Captain Falcon's descendant.

It could be possible that Captain Falcon's green costume could be a reference to the F-zero pilot James McCloud in that he wears a green jumpsuit with silver boots, which would be a reference to James McCloud the founder of starfox team in his starfox uniform.
Fox McCloud, James' son, would later wear this green jumpsuit and silver metallic legs as captain of the starfox team.
Falco's green costume would also wear the green jumpsuit and a greenish silver variation of the metallic legs.
