There isn't a topic on this, so I figured I'd go for it.
Since we're in the middle of the cold-season, I figured I'd share a recipe for my own personal cold remedy right here:
Ingredients:
Base:
• Free-range Chicken Broth
Herbs, spices and flavorings:
• Whole clove of garlic, crushed and minced.
• Ground Cumin (use generous amount)
• Paprika
• Worcestershire Sauce
• Oregano
• Tarragon
• Basil
• Parsley (Italian style if possible)
• Salt
• Cracked Peppercorns
• Lemon juice
Solid Stuff:
• Italian style turkey meatballs
• A noodle of your choice (recommend elbow macaroni)
• Veggies of your choice (recommend cut green beans)
Cooking it:
1. Bring the broth to a boil. Add everything under “Herbs, spices and flavorings” except the lemon juice. Bring down the heat and let it simmer for a bit.
2. Add the meatballs. If you can, thaw the meatballs beforehand and break into small pieces. If they’re still frozen, let them thaw in the hot broth and carefully break them apart with a spoon. Let the meat cook for a bit, stirring occasionally.
3. Add the noodles and veggies, then bring to a boil. Stir occasionally so the noodles don’t stick to the bottom.
4. When the noodles are finished cooking, squeeze in some lemon juice to brighten the flavor a little, then serve and enjoy.
Notes:
-I left the measurements of ingredients out so you can add each to you own liking.
-If the water in the broth boils off too quickly, add a little water to compensate.
The story behind it:
This isn’t your grandma’s chicken soup, this is powerful stuff made to blow your sinuses wide open and taste great doing it. The key ingredients behind the power are the very generous amounts of garlic, cumin and the cracked peppercorns. Other helping ingredients are Oregano and Italian turkey meatballs. Garlic is already a fairly common household cold remedy used in soups. Cumin is a Mexican spice, and like most Mexican spices, it packs a mighty punch. I used cumin because it brings the power of a Mexican spice without shifting the flavor too far from classic chicken soup. Cumin also doesn’t bring the burning sensation of capsaicin, the spicy chemical found in chili peppers. The peppercorns help to boost the power of the garlic and cumin, and on the occasion you bite into one, you get an extra blast of sinus clearing goodness.
So when you’re feeling a little under the weather, cook up this powerful soup to help you get through the worst of it.
