To play devil's advocate here, A Lot of the games people are complaining about with this situation like specifically Mario Golf the stuff being added are bonuses and not fundamental changes. Delaying a game for a single extra stage or a single extra character would hurt potential sales and just generally be counter productive.

It isn't cute to try candy coat what it literally is. It's a literal "**** it, ship it, we'll finish later." Whatever 'later' means. Days? Weeks? Months? A year? And you paid full price. It might not even GET finished.
We shouldn't be paying full price for games that aren't completed. However, there is a difference between a completed game that receives DLC later than a game that's incomplete and gets content trickled out (For free or for a cost) that was supposed to be there day 1.
