I know right? The All Stars version barely looked any different from the NES version plus the game was delayed in America and Europe I believe for 2 years because they didn't have enough of a certain chip to massively produce it at the time in the west because a lot of businesses were buying up all the stock for that chip. I recommend watching the Gaming Historian Super Mario Bros. 3 documentary if you haven't watched it yet because it gives great insight on that.
