The ideas I have, since I'm probably not gonna get to use them, are
  1. Steve can jump significantly higher, but Elytra is replaced with a non-recovery up special like Jigglypuff's sing (not sure what)
  2. Crafting creates exactly 3 blocks, which can be either a ceiling or a wall - walls give Steve a little extra height. Crafting again will erase those last 3 blocks
  3. You can get a tiny bit more wood from mining steel and vice versa than you can in Ultimate
  4. Crafting tables can only be summoned after they've been destroyed. This doesn't apply to scrolling stages
  5. Crafting will use your most powerful material (not including diamond or gold) first instead of your weakest
  6. Steve's animations remain intact, but he gains extra pixelated motion blur FX to make his attacks easier to read, and will flash redder than other fighters when in hitstun both as a Minecraft reference and compensation for sharing an animation with walking
  7. Redstone doesn't exist - you have unlimited string for TNT and Minecart is in a middle ground speed
  8. TNT doesn't flinch when hit
Maybe I would compensate for the decreased complexity by adding a sword/shovel/pickaxe weapon swap feature - perhaps move Craft to Up B and make weapon swap its ground variant - it'd be good for saving your gold weapons. I also think dirt should be needed for the Magma Block to give it some use.
