I beat Mid-level Falcos now, I actually really like the Falco Sheik Match up.

Sounds to me like you are just having input issues. Yes, I know this sound surprising because the inputs aren't that complicated, but the way you phrased it makes me think it is. Never use the control stick to jump because you need it to fast fall. I find that sliding the finger off the very edge/bottom of the "X" button to be the best way for me and my controller to short hop.
