    Yeah, that's what I was afraid of. You think it has to do with Start.dol or is it a flag within the Stage .dat's themselves? I feel like it has something to do with the Dat files, but idk. Pretty new to melee hacking, but I might try looking into this.

    I don't think it's possible, given that poke stadium is a transforming stage. Take a gander at this guide; specifically the byte replacement portion of it. Byte replacements allow you to load multiple versions of the same stage (for example you can have one slot load GrOy.dat (Yoshi's n64)...
