I can't speak for other devices, but with the LGP, there is an HDMI in and out. It captures the feeds and encoded it before transferring it to PC, but the actual video is passed right through to the TV.

Don't rule out 4-player matches. They aren't standard for most tournaments, but it allows more people to play per setup, and it isn't an unusual format for kids who aren't used to competitive play. My first tournament was a 4-player one, and it was a lot of fun.
