I feel like a more appropriate tl;dr would be: Sheik has some easy combos that aren't hard to learn but getting good and performing more complex combos is hard and Sheik doesn't deserve the flak she gets.

I think you are better off trying to just work on your combo game. Most of your combos you can end in a fair when you don't think you can continue it any further. Try integrating utilts into your game which can be followed by f-tilts to fairs or just going for more grabs in general.

You should also be able to time your approach in between his down tilts. If he is at high enough percent that his crouch cancelling won't work anymore you can even dash attack him but otherwise doing dash grabs in between the down tilts should get him. Otherwise back off and charge up full...
