So you main Mr. Game & Watch, you don't particularly respect your opponent, but he did just beat you.
G&W is the only character you know, so no counterpick for you.
Might as well pick the G&W color that's the hardest to see and take advantage of it.
So here are your options. They're all pretty cool.
I'll be referring to them as Default, Ketchup, Mustard, Blue, Green, Cyan, GameBoy, and Inverted respectively.
I will be covering typically legal stages, starting with what I think are the most common ones, with counterpicks and rare stuff being listed last.
No Omega's besides a few common ones, unless people really need me to do that for some reason, and I have a lot of spare time.
Smashville and Town & City times of day will be updated when I get around to it.
Okay so we might as well establish now that Default is bottom tier and will not be considered for most of these because his white outline makes him extremely visible, and Inverted has niche use that we'll cover later

The best thing you can do to optimize your G&W will always be practice and picking Mustard

An interesting pick, for sure. I believe that Mustard and Blue dominate this pick, but feel free to experiment with whatever colors you like.
I highly recommend going to Omega Palutena's Temple as Mustard if you must go to FD.
First Transformation
Blue can be a bit hard to see around the blue areas. Ketchup and Mustard have an advantage on the right side of the stage, but not much.
Second Transformation Pt. 1
Now the background matches Blue a little better. If you jump high up, Mustard blends in with the sun very nicely.
Second Transformation Pt. 2
Ketchup and Mustard dominate this part! Take advantage of how you blend in with the sun!
White Flash
This is why I think Mustard is superior to Ketchup for this stage. Mustard is slightly harder to see than all of them.
Third Transformation
It's hard to say here. You'll have to make your own call.
Notes

BattlefieldAnother stage that I believe goes hands down to Mustard and Blue. I highly recommend switching mains to Mustard NOW.

Ketchup is no slouch either, though. When the camera zooms out after you get launched at sunset, you can use the sky to help mask your recovery just a little bit.
But of course...
Being the shining star he is, Mustard can also use the sun to his advantage.
Once night time comes, you'll definitely want to be Blue, though, as he basically disappears any time he's offstage.
Once again, we can see that Mustard has lower visibility on the ground

Now this one is actually a matter of preference I'd say. There are 3 or 4 really good picks for this stage, and your opinion will change by the time of the day.
That being said, the main 2 you will be using are Mustard, and Cyan
Mustard, as usual, does a good job of blending with the dirt and the grass, as well as the stage itself, especially at sunset, but overall I don't think that makes it the BEST pick necessarily. It fits a well rounded playstyle very well, and it just adds to Mustard's versatility.
Cyan performs the unique function of both blending in with the river, grass, and sky effectively, but he does not blend very well with the platform or the main stage. This makes him much more suited for aerial approaches and mixups, especially at night!
