Why do we never see many Yoshis? We have Raptor who plays him very well, but other than that we rarely see him used. Shocks me because Yoshi is a great character. Why do you think we don't see more Yoshis?

Here I fight a great Yoshi. Really makes me want to pick him up

Yoshi is overrated if anything, IMO. And we're seeing that now as he's slowly slipping down the tier list. He's the type of character that generally doesn't have too many issues piling the damage on but can have real problems landing KO's due to his lack of true kill setups. Most Yoshi KO's need to rely on hard reads or punishes. In fact that video you posted is a good example of that, he had you at 148% on your first stock and only got the KO cause you missed a tech. He got you to 153% on your 2nd stock but couldn't find that killing blow at all.

We have a couple of threads in here discussing this topic actually, look at these:

In addition to Raptor we have The Wall, Nikes and Mr Doom as well. Guys like Apostle and Dunnobro play him at a pretty high level too.

Fact is though, Yoshi just doesn't have the results. I don't believe Yoshi is solo tournament viable. If you're a Yoshi main I fully believe you'll need a secondary to tackle his bad matchups.

From an outsider looking in I see most of Yoshi's moves do kill at high percents and I know his throws don't kill at all or setup at all so theres that. He definitely can rack up the damage quick, but perhaps his biggest struggle is landing the kill. I still think he is fun to play and definitely a good choice to explore more.

Yeah, the fact that Yoshi isn't getting results is the reason that he's not really getting attention.
Hypothetically, though, he should be good because of frame data and stuff, I've heard. That's why he's usually pretty high on tier lists.
