When you die in classic mode, what does that money mean? Is that yet another entry fee you have to pay ON TOP of the entry fee you already paid at the very beginning?

Or is that just like some prize money that's being reduced?

When you increase the intensity, you need to spend gold. Higher intensities require more gold, and whenever you get a game over, the intensity drops by 0.5 levels. The only exception is intensity 2.0, where you never wager any gold, and as such, the intensity will never drop.

Anyway, to play intensity 9.0, you need 2200G. If you get a game over, the intensity drops to 8.5, which means that the 2200G that you've wagered got reduced to 1725G. And to add to this, you'll lose some of your rewards.

Get too many game overs, and you could end up leaving with hardly anything; in other words, you're leaving with less gold than what you've paid.

Likewise, if you get a game over very early on intensity 9.0, and decide to forfeit, you won't be getting back the 2200G that you've wagered. However, if you reach Master Core at intensity 9.0, and then get a game over, you could basically get back not just the 2200G that you've wagered, but you'll also gain a little more gold as well.

So when that money is dropping, it's just the original wager that's dropping? Awesome. I was thinking it was coming out of money I already earned

Yeah you'll never get back the gold that you've wagered. You'll just have to win it back by completing all the stages without getting a game over. If you get a game over too early, your chances of getting more gold than what you've wagered will start to drop.

Of course, the chances of you leaving with less gold than what you've wagered only really apply to the higher intensity levels, as they cost way more gold to play; refer to the link below for how the intensity scale system works.

Of course, that also doesn't take into account the prizes (especially Crazy Orders passes) that would have some 'value' to them either.

Even losing, but getting a Crazy Orders pass is basically winning 5000 Gold (and as such, I aim for those whenever possible, and having two during a Classic run means I get to keep at least one under most circumstances), or the value of the equipment/collectibles earned in a Crazy Orders run.
