What to do with the air dodge...

The momentum-conserving air dodge from Brawl is back, and it doesn't seem that different at all.

Now, the physics are definitely faster and there's some kind of landing cancel that allows you to cancel a landing with any attack (AFAIK). Does that mean this game will be more ground-based with the aerial game still highly limited by the air dodge?

You could always predict they are going to air dodge.

Air dodges are not too difficult to punish if you hold your attacks for the right moment and bait the air dodge out. Just don't throw out your aerial attacks in an obvious way. :)

The solution to most of these problems is: Adapt. Pretty easy to predict the air dodge and make them pay for it, just need to pick your points of attack.

Time it. It also has notable landing lag, so punish that. They're weaker than they were in Brawl, even if they can be used multiple times.

It is quite different actually. In Brawl you could airdodge out of hitstun, now you can only airdodge out of tumble. So a bit later. Also ll you should do is wait a little and attack after the end of the invinsability frames, or wait for the opponent to land and attack during the landing lag. Just choose the right moment.
