I really like the characters and the engine, but the stages just aren't up to par. I'm willing to give it a shot, though.
If I did, and I didn't like it, how difficult would it be to return brawl to normal and what, if any, effect would it have on my saves?

I guess you would just delete the Project M data from your SD card and resume playing Brawl normally. As for your save file, it will add on to your play records and any stickers, trophies, or CDs unlocked while playing PM will still be there in Brawl. There is nothing in PM that can ruin your Brawl save file or affect it in any major way.

If the stages are the only thing you don't like about PM, you can always just delete those files to get the original Brawl stages or replace them with other custom stages.

You never technically "install" Project M onto your wii at all if you use the hackless version. Restarting the system and removing the SD card changes Brawl back to it's original state.
