I know this has been mentioned before in the fact that ganondorf can perform two dair on the same jump. But what I haven't seen is anyone use this in their vids.

This really only works at low percents to help build up damage. When you thunderstorm properly you will land before you opponent and you can perform another thunderstorm that they cannot escape. The second dair can do one of two things depending on how fast you do it.

dair-->up smash (his best)
|------>dair(in air)------>up smash
|------>dair(on ground)------>any air, and up B
|------>Jab
|------>ftilt
|------>up B
|------>any throw
|------>flame choke------>tech chasing
|------>f smash
|------>d smash
|------>uair

I'll get percentages tomarrow

I think I know what your talking about, though I find the timing can be pretty difficult, you have to act fairly fast like you said but I find that it's possible at more mid percents to hit them up, then follow up with either uair or fair, double dair is very damaging but is situational for when you can perfrom it.

Also are their any other follow ups for the first scenario besides up-smash to mix it up, I'd think maybe one of the choke follow up's could work depending on the character

Sounds a bit more like Shdair/Thunderdrop--->Shdair/Thunderdrop combo to me, rather than 2 dairs in a standard jump. I've never tried Up-B as a followup, though. I might experiment with this and see what happens.

the timing is strict for the 2nd jump, but you'll know you did the 2nd jump if he flips, thus the purpose of this topic as well as applications of said move
