I've been playing Olimar for a long while, being my favorite character I've decided to main him and my ground game is second to none. There is however one major problem I'm having, air attacks. What do you do to handle aerial opponents? Peope like Mr. Game & Watch give me a lot of trouble with Forward and Back Airs, and King Dedede makes me wants to hurl with Back Air ledge guarding.

I'm assuming you're talking about SH approaches rather than falling opponents. Those two opponents are possibly the toughest aerialists to handle.(aside from ground game of course) Their moves have great range and priority and they have awesome edgeguarding ability. Really the only thing you can do is try and space yourself and throw pikmin, and then go on the offensive when they land. Like DDD and GaW, I've had a lot of experience with Zelda, another great aerialist. She outprioritizes Olimar in the air(if she can sweetspot) and it's hard to stop her from lightning kicking you when you're both airborne. Try to wade it out, and punish any mistakes they make. Look for opportunities to grab them while they land. It's near unavoidable. Take for example, a DDD that'll float above you and bait you into using an empty upsmash. Try rolling under him and wait for him to land, and wait and shield any attempt at an attack to knock you back. Punish the lag on his moves and wait for him to land. Hope this helped a little. good luck.

If the are short hopping towards you the best thing would be to just fall back and try to re-space yourself, and try to catch them in their falling lag like Dangr said. It is very frustrating i know, i just got demolished by a GW, and I learned the hard way his nair outprioritizes olimars nair... :( If it is a DDD that is floating up high and trying to bait you it, try to get under him and sneak in an upair of your own. Patience patience patience is the best thing.

In the jawn, with the jawn.
Okay this is aerial but it's different from dealing with Aerial opponents.
Olimar's Dair is not the best thing to do to an opponent because more likely than not, it will eaither miss or they will dodge.

Skiiping to the point what's the best way to counter an opponent attacking from below you.
