In Melee, how you could use the Z button as both grab on the ground and as an attack in mid-air, does that exist in this game?

Well, kind of. There's only two shoulder buttons on the 3ds, so instead of two shield buttons and the Z button, L by default has been replaced with grab/Zair and acts the same way the Z button would, and R is still for shielding. As for the Wii U version, it hasn't come out yet, but I assume all the controls will be the exact same with the Gamecube controller as it originally was.

Anyway, in Melee I spam the sh*t out of the Z button. Is that what the competitive players do?

That's kind of hard to gauge considering that there aren't cameras specifically used to view pro player's hands at tournaments, and nobody really goes around broadcasting that kind of information anyway. I think it's just a matter of personal preference, though I could be wrong, I only played Melee at a casual level.
