how is it done? ive done it a few times but i think i must do it too early, not sure though. Any tips?

Blocking it will leave you too close to him because an elbow strike is shorter than a punch and you can easily lose balance. If he performs an elbow strike to your head, simply move your head/torso under his strike and strike his ribcage or stomach with your elbow. That will almost definitely leave him winded and open to additional attacks. You can even step behind him, grab him from behind and perform a suplex, turning the kickboxing battle into a grappling battle. With him winded, he probably won't have much energy to fend off someone lying on him.
