I have been playing Melee since about 2006, but about a year ago I started playing on a higher level. For my whole life I've used :GCA: for all my aerials, but now I want to try to switch to :GCCN:. I'm doing this because, in my opinion, you have a lot more "freedom" while using it. I've figured out that it's harder than anticipated. Any tips on how to practice and such?

Yeah, pretty much. I recommend putting on a level 9 Fox and practicing your spacing with retreating SHFFLed Fairs using the C-stick. Eventually it will become second nature.

Don't listen to that, level 7 is where it's at, level 9's always DI the same way.

Also, should I practice SHFFLed aerials with C-Stick, or just focus on getting used to the C-Stick, then add in the SHFFLing? Also, if it changes anything, I currently don't SHFFL.

A good place to start would be to practice SHFFL with the C-stick, one aerial at a time, and without an opponent. Here's a good channel for Marth training tips:

Don't forget to practice fairs on both sides, because the thumb movement is different. If you're facing right, your thumb has to skip over the c-stick before tapping it, which can be tricky if you're not used to it.

Get used to c-stick, THEN start SHFFLing.

I suggested level 9s because:

1: frame perfect
2: they just want to approach the crap out of you

depends on what you're trying to practice.
I guess, but he really doesn't want them approaching him, to be honest, he needs to learn it on air first.

You should also consider switching your grip to a claw grip so your thumb is always on the C-stick. I use it for every character (habit from my Halo days), but I think it's especially good for Marth since he uses C-stick and Z a lot (aerials, f-smash, buffered rolls; grabs).

I've tried the claw grip and really have trouble using it.

Yeah, just practice.
Play matches where every time you aerial you use the c stick. Might feel weird at first but that's part of the adjustment really.
It's like when learning to wavedash, you just have to go into the match thinking that you are going to use it. And you'll use it, and you'll mess up but then you learn how to use it effectively in time. So just practice

Bit delayed with this reply, but let me elaborate on the (slightly modified) claw I use.

Thumb on C-stick, right side of index finger over Y, middle finger on Z. I slide my thumb up to shield grab or shine grab and to press B. I only use R to wavedash out of shield (R (ring)+ X (thumb)), as it's kind of awkward to press R with my ring finger, but it's definitely doable. I also JC grab with X (thumb) + Z (middle).

Basically, clawing works best if you L-cancel/wavedash with L and jump with Y.
