How are games usually organised using this? I see hamachi is rarely used, is there any sort of server that one can join and see a "waiting games list?" Galaxy and any other client server I join lags me horribly so the only way I can currently play online is through P2P.

Join a server, ask for p2p, get reply, start a chat, have opponent join, divulge/receive IP address, host/connect.

It's faster if you offer to host, because some people are lazy/cannot host.
