ive heard that sonic can't kill himself over the top with up b, so is it a viable technique to momentum cancel when being hit over the top and immediately up b to avoid death?

It's better to use your fastest aerial and FF when hit vertically. You can try the up-B thing though, shouldn't be hard to test in training mode in 1/4 or 1/2 speed....

the spring does not momentum cancel. You will die.
jumps, side B, down b momentum cancel.

Specifically there are two types of hitstun. Hitstun and hitlag. You can't do anything when in hitstun but you can use basic attacks during hitlag to regain some aerial control. However you can still die during hitlag. If you aerial then spring while still in hitlag it'll still cause you to die.
