Everything that I've read says to download project M to a 2gigabyte Sd card. My question is could I use a bigger Sd card? Like an 8 gig card?

You must use an SD card for hackless method. not an SDHC card.
That means 2GB is best. It still fits on a 1GB card though.

If you're using homebrew you may use a SDHC card.
