There are so many moves you ahould get rid of.

Tackle and Ember for Rapidash
Absorb for Roselia, and please make it evolve with a Sun Stone
Tackle for Luxray, and since Crunch is superior to Bite, get rid of Bite, too.
Cut for Empoleon, maybe Bubblebeam.
Fly for Staraptor, unless you need it to go from town to town.
Rock Smash for Machamp. idk about Wake-Up Slap.

About tackle and Ember for Rapidash, I'm waiting for it to learn Flamethrower.
The only Shiny Stone in the game is the one on Iron Island, which I havn't reached yet.
I'm waiting for Luxray to learn Thunder, which will replace Tackle.
I'm going to make Empoleon learn Hydro Pump, or that really strong Water move that some guy teaches to your starters.
I'm keeping Fly, unless some other good Flying move comes along.
What would I replace Rock Smash with?

Just so you guys know, I'm a n00b to Pokemon, so their stats or whatever EV things are probably not that good.

Actually, go whatever way you want with those Pokemon. I suggest you don't try to make competitive movesets until you've beaten the game, because those movesets apply to the online metagame much more than to in-game stuff. If you want Hydro Pump and Surf on the same moveset so you can have more PP, that's fine.
