Question about EV training

I got bored and decided to make a quick team for Pokemon... In case anyone was wondering its Nidoking, Umbreon, Arcanine, Alakazam, Jolteon, and Kingdra. Don't change this, I chose ones I like that aren't terrible but don't want to abuse OU...

ANYWAY!...

So I got a question about EV training. Lets say I train an Umbreon or whatever, get all 510 EVs, get the ribbon for fun, and its level like, 47. Then what? Should I just train it on whatever until 100? After level like 60 training gets hard, then what do I do?

I still have to get the Macho Brace and Power items but yeah, what do I do then?

once all 510 evs are filled, you can battle anything and youre ev spread wont change, so battle whatever you want XD
