Honestly I wonder if there's another method to approach besides timing (and REMEMBER it's a fixed Pikmin sequence)... But since Kirby isn't very common online, I rarely get a chance to practice.

There are two things to take into consideration with any kind of projectile spam:

First, it always has a blind spot. Always. There are no projectiles that are literally unavoidable. Whether it falls short or just can't go that high, you can move out of the way. Even if they put you in what seems like a negative spot, it's not always the worst option to jump out of the way, especially compared to trying to pressure them head on during spam. Getting above them and making them take another option that you can work around easier is usually a way better option than trying to take on the wall of spam - most characters have a blind spot you can bait people into trying to hit you in (Usually diagonally above them, though some characters have incredibly fast/powerful anti-air options, so be careful.), when it would realistically be difficult and put them at a disadvantage when/if they miss, which is why characters with multiple jumps are especially good at baiting based on movement alone (See: Meta Knight.). Olimar doesn't necessarily have that advantage, but I still recommend trying a similar tactic as a lot of players will know when you're too close to even bother with projectiles and try something else, so you can basically bait them into not spamming you with a little bit of smart play, and work around a more comfortable option. -again, it might put you at a disadvantage, but it's not always the worst option.

(There was one point during the video you linked where you N-Aired into him from above during spam and could have really taken the initiative from him (Even without Pikmin. Falling N-Air > U-Tilt is a pretty solid way to get breathing room as Oli.), but didn't really seem to capitalize on the fact that it worked. Remember that for future matches in case it comes up again. Sometimes, the opponent really will be so brain-dead that they won't even stop spamming when you're about to hit them.)

Second, you can camp it out if you really need to, and effectively force them to do something else that way. Even the fastest, most damaging spammable projectiles can be powershielded, dodged or otherwise avoided. Whether this is good or not in the specific MU is subjective, but in the case of Oli vs. Kirby, you likely can camp them out until you need to close in for the KO, since not only do you have the same projectile as Kirby, you have more mobility while using it, and the option to artificially extend the range by jumping when you throw - which Kirby quite obviously doesn't. To top it off, if that's all the Kirby player does, it's going to take them a while to KO you, and with some patience, you can probably force them to act because they literally can't let you keep tacking on %s forever. Heck, if you space it right, you might even be able to cut their spam short by getting them with a well-placed purple, so it's not even like you're not pressuring them back if your Pikmin usage is on point.

Regardless, the overall idea is to not get impatient and roll in or hold shield (It was really obvious you were getting impatient fighting that Kirby. I know it's easier said than done, but it's a big deal when playing to not get frustrated.). Rolling in is almost always a horrible option, regardless of the MU, and holding shield is likely just going to end with you standing there getting pressured until you make a mistake. Even if you're backed to a ledge, my first point always stands, and you can likely pressure them from the air - even if it is a bad situation, you can make it a good one - projectiles tend to be very slow and far more punishable than they look, use that.
