Can't they just put the Switch in a box with holes for wires or something.
Ideally yes, but it isn't very cost effective, specially if you're talking about those acrylic traslucid boxes that Nintendo uses. Wood could be an option too, but it can be a hassle as well to manufacture a bunch in time for December 8.

Yes
An item that you usually don't carry on tournaments.
And the point is to at least make the person that wants the switch have a hard time trying to steal it (having to get the nail cutter from a store or from home then coming back and without being seen proceed to cut the fat stripes on a scene that's constantly watching the Switches)
I get your point, the idea is not to have the setups as loose as the one you have at home
