Mupen64K 0.7.9 was released last night, you can get it at www.okaycreations.com (site only has a download link / change log).
Setup
To set it up you just need to set your ROM Directory, and configure your input (enable at least controller 1 with Raw Data off). If you have a slower PC or a bad video card, you might want to move the plugins from PJ64K into the plugin folder, so it goes faster (but you wont have new graphics).
Goto:
Utilities -> Kaillera (Supraclient)
or
Utilities -> Old Kaillera (original)
Recording
To record a match, goto Utilities -> Start Recording while playing, then enter a name... you will have a 1 second lag because it is saving the state for playback. Then continue to play as normal.
Playback
To playback a match, goto Utilities -> Start Playback while playing, the choose the .mkr file. It will then take over the game playing it back at console speed.
AVI Capture
To capture an AVI (warning this is not for newbies) start playback, then goto Utilities -> Start Capture, enter an AVI file name then select a codec (codecs determine quality, and size), the game will playback slow because it encodes every frame to the AVI, but once it is done it will playback (in the AVI) at console speed. The files might be huge (300mb-500mb) if you do not using any compression, so if you do not know how to encode, I suggest waiting until I get around to writing a guide.
Mupen64K Recordings
I think it would be cool if people started posting there recorded matches, so to start... I will post mine:
