I've tried this, it's actually pretty difficult to get off in a real match unless you've practiced it a lot and the opponent is pretty dumb.

Yeah, you can do this in Doubles too. You just need to have Snake as your partner so he can put some C4 on you. Run up and grab someone and while you do the Uthrow, Snake blows up the C4. This actually has to do with port priority. As long as your port is a higher number than the opponent, this will work because you will get no knockback from the explosion, but they will. P4 is broken as ****. Red MK with a green shield is the ****. Say something about it! 
Edit: But, yeah, your opponent would have to be pretty stupid to let you do this to them in Singles.
