I only watched Fox VS Falco atm, however you seem to know quite well how to fight Fox. The only advice I can give you atm is just to be a bit more careful (like.. don't randomly smash or Up B). If you need to know more about the match up watch PC Chris VS M2K from FC6 or PC Chris VS Forward (or even me VS Ravenlord =P).
Edit: Against peach you tend to be too offensive. What you're supposed to do is spam lasers until either Peach can't stand it anymore and starts approaching (in this case, take advantage of your better speed and use hit and run strategies) or Peach's shield is so small that an ANA/ADA approach will shield stab. ADA is a life insurance against Peach's Dsmash but ANA has more range and is faster so you should be using mostly ANAs. Falco's ground game is completely screwed by Peach's shield grab skills and Dsmashes so use mostly aerials. Sometimes use dash attacks and grabs (only if you're sure Peach won't counter them) and if Peach is trying to land you can use Utilt as an alternative to Bairs in order to keep her in the air (landing for Peach is really hard, so toss her in the air as much as you can using shines).
