At first I couldn't edit them either, erasing nametags in Controls seemed to help. I still can't make new ones though. Why can't I make new ones after deleting some?

I've been plagued with the same issue myself. I initially created only one extremely simple stage just to satisfy one of the challenges, then forgot all about it until I maxed out at 230 replays. I gradually went through deleting some of those, bringing it down to 200 replays, and it still wasn't enough to allow me to edit my one and only stage. Eventually I deleted enough replays just so I could edit my one stage. I saved more replays and ran into the same problem yet again. It is a continuous hassle.

The problem with this version of Smash seems to be that custom stages take up way too much space. I sincerely hope an update will allow us to offload replays and custom stages to SD cards like we could with Brawl, as this issue is definitely getting old fast.

Well deleting names in controls helped me edit them, but after saving more replays, I can't edit them anymore. I just don't understand why it won't let me edit them. Or why I can't make new ones after deleting multiple? It just doesn't make sense to me.

It's weird, it's like it's designed so that all the custom things in the game are saved (mostly) into the same storage. So custom stages and replays both take up space in the same area. I have like 14GB free on my console, yet it still does it, so it must have a designated area and a set amount of custom stuff you can save. If you are close to filling up that space, and you go on replays, you'll notice it takes forever to load as opposed to when it's empty. I think it was done this way so that the game didn't take forever to load, that, or it would crash if it had too much stuff in there.

It's incredibly annoying, especially when you save replays and plan to record them for Youtube. But at least it's better than the 3DS's version where you could save like 32 replays I think it was? Something silly like that.

I don't have enough space to EDIT my custom stages, but I have enough to save replays with someone else's custom stages. WTF?!
