How do you know who really wins?

So recently, I went to my first "tournament" I thought I did pretty well for my first time even though I was shaking so much lol. I placed 3rd out of 35 people who were all mostly in their 20s (i'm 15) in a small video game store decently nearby(only because all the bigger tournaments are too far LA etc) and when I signed up they made a bracket and called up the people who were going to play against each other next and because they only had one setup one guy was just calling up who was next and asking who won when we were done.My question is, at REAL tournaments with lots of people attending and multiple setups (20-50 just taking a guess) who keeps track of who loses, who wins, and who fights who next on what setup? New to this stuff obviously and would like some information, thanks.

If I had to guess:

- They use Challonge to organize the brackets and just go in order. (how many people playing depends on the number of set-ups)
- Both players, or a trusted person, report the results of the set to the organizer.
- I don't think the setup thing is a problem; unless you have one that streams, then it's likely people who put up a good show and would generate hype for the stream.
