Double Fair? well I jump with x, so when I short hop, I flick my thumb over x, and then immediately go to the C stick for the fairs. This is when I am facing to the left. When I go to the right, I short hop and hit A to the the right, then do the second fair with C stick. I've practiced enough to do it with either, but that's the easiest for me.

I do the same except I jump with Y. You just have to get your fingers used to it (@OP)

the first fair needs to come out fast, the second fair you just need to time correctly

short hop with x or y (or even tap to jump on the control stick if you're super scrubby)
then AS SOON AS YOU CAN input forward air either with the c-stick, a, or z
then WAIT until the fair is over
fair again

don't fastfall

easy way to practice is to go into special melee and do slow mode, then you can get a feel for the timing of it and do it in real time. SHDF is a really important aerial zoning tool with marth and being able to do it consistently, along with sh fair up air, will give you hella control that you desperately need in order to take critical stocks from high level players.
