Can a Smash Brothers fighter be a mounted unit?
Wario on his Bike says hi.
But he's hardly the only one, most Smash Brothers characters have some form of vehicle that a jousting minigame could incorporate. And these mounts could even have unique strengths and speed to further flesh out this minigame. But here's what I mean character by character.
Let's start with the obvious ones and the inspiration for my wish. Fire Emblem. I remember when Melee was still current and Fire Emblem 7 just came out I wanted to play as Eliwood more than I did Roy (according to the translation of FE6 I was playing at the time, Eliwood seemed like a more fully fleshed character). And had to justify to my college roommate and sparring partner what would warrant the difference between Eliwood and Roy. Well Eliwood can use lances upon upgrading, and also receives a horse. So I figured he'd be on a horse.
But Eliwood will never be a character. Whatever, that was like a decade ago, but the idea of mounted Smash Brothers combat still holds. So here are the mounts as I see them.
Mario, Luigi, and Peach: Yoshi or that bigger orange dino from 3d World.
Bowser: A small airship
Yoshi and Rosalina: A Mario Kart.
Captain Falcon: Standing atop the Blue Falcon
Samus/Zero Suit: Mini Samus Ship or a Chozo.

Toon Link: Epona. Or a train. Or his ship with Linebeck. Or King of Red Lions.
Ganondorf: Becomes Beast Ganon for the mount with a Phantom Ganon that has Ganon's sprite size and moves replacing him.
Zelda: Epona
Sheik: Epona
Ness: Runaway Five Van
Lucas: That walking table/surfboard thing
Kirby, Meta Knight, Dedede: See their vehicles in Kirby's Air Ride. Kirby on a warp star.
Bowser JR/Koopalings: A Larger clown car. Or a Mini Airship. Or a chariot being pulled by chain chomps.
Duck Hunt: An 8 Bit horse from that western game he keeps summoning guys from.
Pit, Palutena, and Dark Pit: That exo cycle or the chariot from uprising.
Olimar/Alph: a rocket.
Game and Watch: Also a rocket. A more monochrome one. Or a horse. He's got lots of possibilities.
Pac Man: That missile he surfed on in the days of Super NES
Sonic: Tails and the Tornado
Fire Emblems: Horses. But this makes the need for a pegasus or wyvern rider increase.
Donkey Kong: Rambi the rhino
Diddy Kong: Espresso the ostritch
All Pokemon: A Rapiddash. Or some other pokemon. Maybe a Rhyhorn. Or a Gogoat. Or an Onyx.
Wii Fit Trainer: That creepy Sentient Balance Board.
Mii Fighter: A centaur based from another Mii in the system.
Little Mac: Bicycle.
Wario: Motorcycle
Dr Mario: The Viruses.
Mega Man: Rush Cycle
Villager: Essentially already does this with the rockets.
Fox and Falco: Surfing an Arwing.
Rob: A bike made out of vintage nintendo controllers and systems.
