I'm still pretty new to Sheik and I was wondering when should i be using fair and when should i be using nair and if there were any other tips in general for a newbie like me coming from a (bad) jigglypuff.

Ok think about it this way:
Your goal is to hit him with as many fairs as you possibly can.

Nair has tons of uses. It will be impossible for me to list them all.
One of most common ones is to use instant Nair Out of Shield which, if done perfect, gives you a hitbox on frame 6 really close to the ground and rising.
Nair has great uses when edge guarding, but has almost no place in combos. For combo finishers almost any other aerial is better and you cannot follow up on Nair unless there is something crucial I am missing.

Challenge accepted! I am about to see what it takes if you want to use Nair to act as a combo link

Mostly what Tripzilla said but I think the other big use of nair is for interrupting combos. Since it comes out on frame 3 and is a sex kick (the hitboxes stay active for a while) it's great for stopping or trading whatever the next hit might be.

I definitely don't like it as an approach tool (even though m2k uses it a lot) since fair or even bair is almost always better, but it does make for good shield pressure since the latest l-cancelled nair gives you exactly 0 on shield (1 frame better than auto-cancel fair or late fair). I'm not sure what place it has in combos at all except for a combo-finisher though...

Woah you got it ChivalRuse!
It was even a strong hit Nair to DA. Good stuff. I think he must have DI'd in for that to work.
My friend and I brainstormed a bit and on no DI you can just barely combo very late Nair into Dash attack.
Falco at 80%, No Di, grounded. SHFFL Dair -> SHFFL Rising Weak Nair -> DA.
It's very hard to hit.

On DI in you should be able to get all kinds of good stuff like Ftilt instead of the DA.

So noone here has mentioned nairs from the ledge while edgeguarding, yet. Invincible nairs from the ledge are one of my favorite ways of edgeguarding a spacie that's riding the wall below me or recovering in a path that'll let them get hit by the nair. It's a super easy rinse and repeat edgeguard that works at super low percents and racks up massive damage. If you want to end the edgeguard earlier by going deep, you can. Or you can just continue to nair, refreshing invincibility as you need to.
