For the Wii U version I assume considering you mention USB.
Unfortunately, the way the game is designed is that patch data and save file information are separated. When you update your game, it places a patch into your internal file system on the Wii U and then when you boot the game, the patch is loaded as overhead to the game. The game disc itself is left in-tact, and the save file has no alteration to it from the patch either.
When you play the patched version with a previous version's save, the game will internally update your save to work with the new patch, and playing a previous patch with the same file will result in it displaying a "this game is missing a compatibility patch", making the replay you want impossible to obtain even if you did delete the patch on your file system and found an upload of a previous patch.
